Oven cauliflower

What you need:

1 head cauliflower
1/4 cup EVOO
1/4 cup Parmesan cheese
1/2 cup bread crumbs
Salt/pepper

Cut up cauliflower
Drizzel with EVOO
Coat with the cheese and crumbs

Dump onto a foil lined pan
Salt and pepper

Bake at 400 for 40 minutes stirring half way through
Will be somewhat crunchy when done

Cracker Barrell Chicken

What you need:

1 cup zesty Italian dressing
2 tsp lime juice
3 tsp honey
Chicken breasts

Combine all ingredients in ziplock bag or bowl
Let marinate for 1 hour
Put in a skillet and cook over medium heat until liquid evaporates


Yummy!!

Cauliflower (Stephanie Snyder)


Source: Adapted from Bullfrogs & Bulldogs
Serves: 2-4 as an appetizer (or 2 if you're eating it for dinner as a meal)

Ingredients
1 head of cauliflower

For the batter
1/2 cup all purpose flour
1/2 cup water
dash of Frank's Wing Sauce (or Frank's Original Hot Sauce)
1/4 teaspoon garlic salt
1/4 teaspoon dried onion (I use Tastefully Simple's Onion Onion)

For the buffalo sauce
1/4 cup Frank's Wing Sauce
4 Tablespoons salted butter, melted
pinch of salt

Directions
Preheat the oven to 450 degrees.

Line a baking sheet with tin foil and spray with non-stick spray (I always use olive oil spray) and set aside.

Wash your head of cauliflower and cut into pieces. I made a variety of sizes.

In a medium bowl, mix together the batter ingredients. It will be fairly thick.

Dip each piece of cauliflower into the batter until fully and evenly coated. Place onto the prepared baking sheet in a single layer.

Bake for about 15 minutes until the batter just hardens.

In a small bowl, mix together the buffalo sauce ingredients.

Once the cauliflower are done, remove from the oven and brush with the buffalo sauce. Again, fully and evenly coat each piece.

Put back into the oven and bake for a few more minutes (I think 5-7 minutes was my range), until  the sauce has mostly dried and the cauliflower is crispy.

Remove from the oven, let cool, then enjoy! We dipped ours in Ranch dressing.

BBQ chicken soft taco ( Stephanie Snyder)



Clean Eating BBQ Chicken Soft Tacos

Ingredients:

  • 6 large chicken breasts
  • 1 1/3 cups clean eating bbq sauce
  • Whole wheat or organic corn tortillas
  • Toppings such as chopped tomatoes, guacamole or chopped onions

Directions:

  1. Put the chicken and sauce in the slow cooker for 5-7 hours on low or until it easily shreds when stirred. Use to build your tacos.

Turkey Burgers (Stephanie Snyder)


Buffalo Wing Turkey Burgers

1 lb ground turkey
1/2 cup shredded zucchini
onion powder
garlic powder
cayenne pepper
salt & pepper
1 red bell pepper chopped
1 sweet onion chopped
1/4 cup Red Hot Wing sauce
Mix gr turkey, zucchini & all seasonings (to taste)
Put some olive oil in a frying pan & get the pan hot. Make 4 thin burgers & add to the pan. Toss in red peppers & onions. Add Wing sauce. Cook 3-4 minutes on one side then flip your patties. Finish cooking until done.
Serve over generous stack of lettuce leaves. Enjoy!

Chicken tortilla soup

What you need:

I chopped onion
2 tsp EVOO
14 oz chopped green chilies
Minced garlic
1 tsp cumin
15 oz can tomato sauce
14.5 oz can diced tomatoes
1/4 cup parsley
2 tsp lime juice
3 cans chunk chicken ( or you can use boiled chicken breasts)
5 cups chicken broth (or your broth from boiling your chicken)

Optional toppings:
Shredded cheese
Sour cream
Lime tortilla chips

Sautée onions in EVOO
Add chilies, cumin, garlic

Stir in broth, sauce, diced tomatoes and bring to a boil
Add in chicken

Reduce heat and simmer- add in parsley and lime juice

I cook on low in crockpot all day

Snacks

First off let me say, try water first!
Often times we "think" we are hungry, when in reality we are just thirsty :).

Good snacks:
Almonds
Banana and peanut butter (natural/organic)
Berries
Veggies
Raisins
Dried fruit
Salsa with whole grain chip (be careful!  If you are like me you could eat the entire bag!)
Apples

Also advocare has a really good snack bar (tastes like a brownie)

Pumpkin Chocolate Chip Protein Pancakes (Steph Grudier)


Pumpkin Chocolate Chip Protein Pancakes

1/2 oats
2 egg whites
1/2 c pure pumpkin
1 scoop vanilla whey protein
1 t unsweetened vanilla almond milk
1/2 t each of cinnamon, nutmeg, and pumpkin pie spice

"Frosting"
Equal parts pumpkin, protein powder, and almond milk!

Birthday pancakes (Steph Grudier)

What you need:



1/2 c raw rolled oats
1 egg white
1 whole egg
1 scoop birthday cake protein powder
1 t almond extract
1 t baking soda
1 t almond coconut milk
1/4 c cottage cheese
Blend in a blender

Icing :)
Greek yogurt mixed with vanilla cream casein and almond coconut milk

Chicken kabobs (recipe from Annette Lower)

What you need:

Chunks of chicken breast (3-5 breasts)
Onion
Mushroom
Peppers
Italian dressing
EVOO
Seasoning
Skewers (soak in water for several hours prior to making kabobs)

Chunk up chicken
Marinate in Italian dressing (I left mine marinate overnight or at least for 2+ hours)

Cut up veggies into larger bite sized pieces
Coat with EVOO and seasoning

Construct kabobs and grill

Really yummy :)

Could also so shrimp as well

Overnight mason jar oatmeal

What you need:

Mason jar (I think it's 16 oz?) complete with lid
Whole grain oats
Almond milk
Fruit

Place 1/2 - 2/3 cups oats (uncooked) in mason jar
Add your favorite fruit
Fill rest of way with almond milk

Place lid on jar
Give a good shake
Refrigerate overnight

Eat cold or pop in microwave for a few minutes and just like that you have oatmeal :)


** you might have to play with your oatmeal amounts depending on size of jar and your own personal preference to oat vs milk ratio

Turkey burgers

What you need:

Pkg ground turkey
Pkg dry onion soup
1/3 cup bread crumbs
1/3 cup water
Black pepper

Combine all ingredients
Make into patties
Grill

We eat bun-less and top with avocado and EVOO mayo

Frozen Fruit

What you need:

Cans of your favorite fruit :
         Cherries, pineapple, mandarin oranges
Frozen strawberries
Frozen container of strawberry breeze (in with frozen juice)
Bananas (if desired)
Blueberries ( if desired)
Raspberries (if desired)

Drain juices from fruit into a sauce pan
Bring to a boil- boil for 2-3 minutes

In the mean time- empty fruits into a large freezer container with lid.

After juices have boiled remove from hear and add frozen strawberry breeze

Dump juice liquid over your fruit

Put lid on and freeze :)

** if using bananas, cut up on the top of fruit after you pour juice on fruit ( so they don't get gross )

Mexican!

What you need:

2-3 boneless skinless chicken breasts ( 4-5 depending on family size)
1 large jar of salsa
1 pkg of taco seasoning

Place all ingredients in crockpot ( 4 hours on high, 6-7 hours on low)
Shread chicken

Yes- it's just that easy lol!!!

We eat this on salads topped with avocados, tomatoes, onions..... Whatever you like on salad.
We top with taco sauce and a dollop of sour cream

Super easy and super yummy!

Hey All!! 

First post :). This blog is designed for those of you who ask yourself "what am I going to make for dinner?"   I often ask myself the same question :)  

It's blog is designed to give you ideas for dinner, feel free to change it to your own likes.  I did not create these recipes, I have found them from other sources.  The majority are dinner or lunch ideas, but some are breakfast too.
