Oven cauliflower

What you need:

1 head cauliflower
1/4 cup EVOO
1/4 cup Parmesan cheese
1/2 cup bread crumbs
Salt/pepper

Cut up cauliflower
Drizzel with EVOO
Coat with the cheese and crumbs

Dump onto a foil lined pan
Salt and pepper

Bake at 400 for 40 minutes stirring half way through
Will be somewhat crunchy when done

Cracker Barrell Chicken

What you need:

1 cup zesty Italian dressing
2 tsp lime juice
3 tsp honey
Chicken breasts

Combine all ingredients in ziplock bag or bowl
Let marinate for 1 hour
Put in a skillet and cook over medium heat until liquid evaporates

Cauliflower (Stephanie Snyder)


Source: Adapted from Bullfrogs & Bulldogs
Serves: 2-4 as an appetizer (or 2 if you're eating it for dinner as a meal)

Ingredients
1 head of cauliflower

For the batter
1/2 cup all purpose flour
1/2 cup water
dash of Frank's Wing Sauce (or Frank's Original Hot Sauce)
1/4 teaspoon garlic salt
1/4 teaspoon dried onion (I use Tastefully Simple's Onion Onion)

For the buffalo sauce
1/4 cup Frank's Wing Sauce
4 Tablespoons salted butter, melted
pinch of salt

Directions
Preheat the oven to 450 degrees.

Line a baking sheet with tin foil and spray with non-stick spray (I always use olive oil spray) and set aside.

Wash your head of cauliflower and cut into pieces. I made a variety of sizes.

In a medium bowl, mix together the batter ingredients. It will be fairly thick.

Dip each piece of cauliflower into the batter until fully and evenly coated. Place onto the prepared baking sheet in a single layer.

Bake for about 15 minutes until the batter just hardens.

In a small bowl, mix together the buffalo sauce ingredients.

Once the cauliflower are done, remove from the oven and brush with the buffalo sauce. Again, fully and evenly coat each piece.

Put back into the oven and bake for a few more minutes (I think 5-7 minutes was my range), until  the sauce has mostly dried and the cauliflower is crispy.

Remove from the oven, let cool, then enjoy! We dipped ours in Ranch dressing.

BBQ chicken soft taco ( Stephanie Snyder)



Clean Eating BBQ Chicken Soft Tacos

Ingredients:

  • 6 large chicken breasts
  • 1 1/3 cups clean eating bbq sauce
  • Whole wheat or organic corn tortillas
  • Toppings such as chopped tomatoes, guacamole or chopped onions

Directions:

  1. Put the chicken and sauce in the slow cooker for 5-7 hours on low or until it easily shreds when stirred. Use to build your tacos.

Turkey Burgers (Stephanie Snyder)


Buffalo Wing Turkey Burgers

1 lb ground turkey
1/2 cup shredded zucchini
onion powder
garlic powder
cayenne pepper
salt & pepper
1 red bell pepper chopped
1 sweet onion chopped
1/4 cup Red Hot Wing sauce
Mix gr turkey, zucchini & all seasonings (to taste)
Put some olive oil in a frying pan & get the pan hot. Make 4 thin burgers & add to the pan. Toss in red peppers & onions. Add Wing sauce. Cook 3-4 minutes on one side then flip your patties. Finish cooking until done.
Serve over generous stack of lettuce leaves. Enjoy!

Chicken tortilla soup

What you need:

I chopped onion
2 tsp EVOO
14 oz chopped green chilies
Minced garlic
1 tsp cumin
15 oz can tomato sauce
14.5 oz can diced tomatoes
1/4 cup parsley
2 tsp lime juice
3 cans chunk chicken ( or you can use boiled chicken breasts)
5 cups chicken broth (or your broth from boiling your chicken)

Optional toppings:
Shredded cheese
Sour cream
Lime tortilla chips

Sautée onions in EVOO
Add chilies, cumin, garlic

Stir in broth, sauce, diced tomatoes and bring to a boil
Add in chicken

Reduce heat and simmer- add in parsley and lime juice

I cook on low in crockpot all day

First off let me say, try water first!
Often times we "think" we are hungry, when in reality we are just thirsty :).

Good snacks:
Almonds
Banana and peanut butter (natural/organic)
Berries
Veggies
Raisins
Dried fruit
Salsa with whole grain chip (be careful!  If you are like me you could eat the entire bag!)
Apples

Also advocare has a really good snack bar (tastes like a brownie)
